Hey everyone, about time we got some of these really really really really really really really good sounding sauces, burgers, fish, steaks, chicken, bakes, etc that are always mentioned in IRC and in game channels. *coughSOULBLYTHEcough*
Post up your favorite recipes!

I'll start

Carribean Burger
ground beef - as much as it would take
oatmeal - to preference, helps keep burger's shape
1-2 eggs
chopped onions
chopped green pepper
your favorite sweet BBQ sauce - to taste

Mix it all up in a giant bowl, grill, brush with more BBQ sauce as needed to keep moist

thin sliced ripe mango
thin sliced avocado
sprinkle with lime juice

let's star with a favourite. PIZZA!


Basic pizza dough:

1cup warm water
1 packet granulated active dry yeast
2 1/2-3 cups ubleached flour
2 tablespoons olivee oil, plus oil for greasing the bowl and pizza pan
1/2 teaspoon salt
cornmeal for dusting the pan

Place the water in 110 -115 degrees farenheight in a 2 quart mixing bowl, and sprinkle the yeast over the top. mix gently until full dissolved, add in half the flour, 2 tablespoons oil and the salt, using wooden spoon combine well, then gradually add the rest of the flour.

The dough should now be a large sticky mass and might appear to be a hopeless mess. Dont despair! When it begins to stick together and come away from the sides of the bowl turn it out on a floured surface and begin to knead.

Knead following: Place the ball of dough in a 3 quart bowl which been lightly oiled, rolling the ball around until the surface is coated with oil. cover the top of the bowl with plastic wrap and let stand in a warm place for about 1.5 to 2 hours or until doubled in size.

uncover the bowl and punch down on the risen dough, expelling the gases. the dough is now ready to be used.,

place the dough on a lightly floured work surface and cut it in half. starting in the middle and working outwards roll each half into a circle slightly larger then your baking pan.. allow the dough to "relax" for a minute or two before transferring it to a pizza pan, oil it and sprinkle lightly with the cornmeal. if using a screen brush lightly with oil. you can now make a pizza!

I'll start you off easy here Ziggy. I have to watch what I hand out as I'm finally working on a cookbook and don;t wanna give those recipes away :)

All Purpose Dry Rub

In a small bowl combine the following ingredients and mix well:

2 Tbsp, kosher salt
2 tsp, Cumin
1 Tbsp Black Pepper (chef grind preferred)
2 tsp Old Bay seasoning
1 tsp celery salt
2 tsp light brown sugar
2 tsp sweet or hot paprika
2 tsp chili powder
1 tsp rubbed sage

Take this mix and rub it on any meat except fish. Allow it to sit on the meat for 20-30 minutes before cooking.

You can remove the Old Bay and/or sage and replace with Chinese Five Spice Powder. Use specifically for chicken and pork.

This is my favourite and its so easy.

Homemade Caribbean BBQ Marinade

1 tsp Caribbean Everyday Seasoning
½ tsp Cumin
1 tsp Harissa Paste
4 tbsp Smokey BBQ Sauce
4 tbsp Tomato Ketchup
1 tsp Seriously Hot Jamaican Pepper Sauce
2 tsp Honey

Mix all the ingredients together except for the honey. Marinade your chicken for at least an hour. With any leftover marinade, add the honey to it and when the chicken is cooked, brush the chicken with the honey mixture and grill until at your specified crisp.
Serve with rice that has been cooked in 1 can of coconut milk and the same amount of water and petit pois peas.

What you need:

Sharp Cheddar, preferably Aged.
Monterey Jack Cheese
Jalapeno Gouda

To prepare, grab a small cast iron frying pan, preferably seasoned, and a rubber/silicon spatula. You basically need something that'll bend nicely without melting.

Grate the various cheeses and separate them.

Place the frying pan over low heat, and add the Cheddar until it is melted and covers the entire bottom of the ban to no less than a quarter inch.

This next bit is kind of tricky, as it relies entirely upon knowing when cheese burns, and every situation is different.

Once the Cheddar has melted, and is about to burn, quickly add the remaining three cheeses to the middle of the frying pan on top of the cheddar. Wait about 30 seconds and then, with the spatula, roll the cheddar into a tube roughly the size of a burrito.

Crank the heat up to high for another 30 or so seconds, then remove and allow to cool slightly, or to taste.

Enjoy your ChupaQueso!

The cheeses can be changed to suit your tastes, if you so wish.
